Italian Meatballs
1/4 cup Italian dressing
1 pound 90 percent lean ground beef.
1 egg, lightly beaten.
3/4 cup Italian bread crumbs.
1/4 cup fat-free milk.
3 tablespoons finely chopped onion.
1 tablespoon finely chopped garlic.
1 teaspoon dried thyme leaves.
1 teaspoon salt.
1/2 teaspoon pepper.
Shredded Parmesan cheese (optional)
Shape mixture into 20 meatballs, about 1-1/2 inches in diameter.
Arrange on broiler pan that has been sprayed with cooking spray. Drizzle half of dressing on meatballs.
Broil 3-4 inches from heat until meatballs are cooked through (160 degrees), about 10 minutes, turning once and brushing with remaining dressing.
I got this recipe out of the Syracuse newspaper a few years ago. And when I say "a few," you all know that it's longer than that but I'm so not old enough to say how long ago it really was.
And speaking of denying my age, I got into my beast of a car the other day (which I really love, by the way) and looked behind me at all the carseats. I totally felt like there was no way I was old enough to have a vehicle full of car seats. Do you know what I mean?

You only have 3 car seats. That's not a lot! Now, if you had, like 5 or 6 car seats at one time, I would consider that a lot! And you're not old.
Haha, I've thought that many times - "am I OLD enough to have three kids?" So yeah, I get it.
And thanks for the recipe - I've been needing a good meatball recipe, so I'm excited to try this one!
