What's for breakfast?

I did a mini-lesson last night at Relief Society for healthy on-the-go snacks. Apparently I'm a little bit of a health nut judging from all the reactions I got, but whatever. I think I've always known I am a little, now I feel a little over the top, but I don't really think I am. I just want my husband to live to a ripe old age.

Aaaaannnnyyway, I made some granola bars because I think the ones you buy at the store have too much sugar and I was trying to come up with something new. They are really yummy! We've been eating them for breakfast because it is pretty much like oatmeal in a bar.

Easy Granola Bars

3 cups quick cooking oats
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter, melted
1 cup flaked coconut
1 cup sliced almonds
1 cup miniature semisweet chocolate chips
1/2 cup sweetened dried cranberries

Preheat oven to 350. Grease a 9x13 pan. Mix all the ingredients together with your hands until well blended. (This is sticky!) Press flat into the prepared pan. Bake for 20 to 25 minutes, depending on how crunchy you want them. Lightly browned around the edges will give you the moist, chewy bars. Let cool for 5 minutes, cut into bars (this is crucial - I missed this part and cutting them later was a challenge) and then let cool completely before serving.

Now for the Sarah variations. Use non-fat sweetened condensed milk, omit the chocolate chips and add 1/2 cup dried blueberries. In the comments where I found this recipe, people had tried all kinds of different things. I'm positive you could add whatever sounds yummy. In fact, right now I'm thinking a little cinnamon would be delicious! There was a sister there last night that wondered if you could make it dairy free and we were pretty sure honey could be substituted for the milk.

The votes here are pretty good. There was another sister there last night that said she wasn't expecting to like them but really did. So, there you go. Whip up a batch. It literally takes minutes and is very, very similar to a cookie. Yum!

I've done them with corn syrup! They don't last long in my house.

Just one thing I've learned this week from having GD. Compare non fat versions of food to regular ones because often when they remove the fat, they add sugar. Just a matter of which you would prefer to have in your food. Thanks for the recipe, I'll have to try it!
